Cut Hill Wall Distillery was founded by a group of highly motivated beverage industry professionals who share mutual passions, aspirations, and a drive to make their own distinct contribution to the world of whisky.
The distillery’s vision is to produce whisky that will be admired — whisky that builds upon the foundations of classic Australian craftsmanship while paving the way for future generations.
Australia’s whisky story began in 1820, flourishing between 1894 and 1960 when millions of litres of local single malts and blends were produced each year.
Cut Hill Wall Distillery is dedicated to exploring Australia’s whisky roots, delving into history, and evolving the traditions of old. Its production philosophy combines time-honoured techniques with modern technology, creating a contemporary interpretation of a classic style.
Why Cut Hill?
In 1868, Jabez Grimble was commissioned to undertake an ambitious project — to make the descent into Victor Harbor safer via Cut Hill. Stone was carved from the hill and meticulously laid to form a retaining wall without the use of lime or mortar. This wall remains admired worldwide for its engineering brilliance and craftsmanship.
More than 150 years later, that same route now provides safe passage to Cut Hill Wall Distillery’s 40-acre property in Hindmarsh Valley — and onwards to Victor Harbor.
